I'd say take a look at the '13 to '18 BMW R1200RT and R1200GS models.  With the new 1250 out in 2019, prices on the superseded water heads will probably be down a little bit.  Either would be less than 700 lbs, with a low center of gravity, and will easily handle as much spirited riding as you would want to do.
Ha-ha, if the GS handles all the spirited riding one can do, why do you also own 2 CBRs?  Or are they both track bikes?  ;)

The 600F4i is now my track bike, and the CBR1000RR is for when I feel like acting more like my shoe size.  ;D

2012 r1200rt, heated grips, heated russell day-long saddle, cruise, jm-cb 2003, gps, sirius-xm, valentine one, bmw large trunk, extra power outlet, midnight blue and more.  i bought it new in 2012 has about 55k miles never wrecked. great condition.  it is light, has all day comfort and plenty of power.  its been to every national park with a road to it.....and back.  easy to roll around the shop.  if it sounds like something you might be interested in drop me a line. thanks

One thing about the Valkyrie is that although it is heavy, it carries its weight pretty low, and the seat height is low.

I would immediately rule out bikes like a Super Tenere and V-Strom 1000. They are not as heavy, but they've got tall seats and carry their weight high. You're probably more likely to drop one of them than the Valk.

How about a nice 2010 Honda Deauville? Won't have more go than the DL650 though.

I'd say to stay with the DL650, travel a bit lighter to add the speed. Then, add something that is PROPERLY light. How about a Suzuki TU250X? Or Honda CB500F? Or maybe even a scooter. Don't laugh, they're so much more fun than a motorcycle, around town, and scooter rallies are also super-fun.
