Regarding food, I generally pack my own stuff in, even during the years I rode to races. I get to eat what I like, don't need to wait in long lines, and save some money. More gas for riding :) So I don't know what much they sell at most tracks I've visited. I do remember Laguna Seca having quite a lot of options, with the tri-tip sandwich being most excellent.
